Fermented Blueberry Jam 250g

Classic Blueberry jam is great, but it can often taste a little one-dimensional and overly sweet. So we rolled our blueberries in fermented yuzu puree to let them ferment for a few days before cooking them out into a jam.

This process helped to coax out more complex and intense flavours from the berries (as well as their pectin), convert some of the fruit’s sugars into acids while infusing the citrusy top notes of yuzu. Then, when it came time to cook, we infused a big scoop of Teacraft’s ‘Iron Goddess’ Oolong tea to add a touch of tannins and ‘base note’ flavours.

The result is still approachable enough to enjoy just like any other jam, but it’s perhaps got a bit more going on in the flavour department. Enjoy!
