Dino's Hot Sauce

For this potent hot sauce, whole pineapples are charred on the Al Pastor before being blended with vinegar and Habañero chillies.

Toby Wilson is no stranger to spice. He’s run cult-status Sydney kitchens such Ghostboy Cantina, Bad Hombres and most recently, Taco King. His approach to food is simple but hard to pigeonhole, given his menus often borrow equal-handedly from both Latin American and Asian influences. Toby argues that the flavour combinations in many of the world’s favourite regional cuisines stem from similar DNA - and its our culinary duty to borrow their best elements to create something new.

Toby’s teamed up with long time friend Matt Davis to bring us ‘Dino’s Hot Sauce’, a reference to the fictional Dino’s Bar and Grill referenced in Thin Lizzy’s The Boys are Back in Town.

The release is also an homage to a good friend lost to suicide, with 50% of profits donated to The Black Dog Institute.
